Turkey can be great. like all poultry it needs the right work. Sous Vide, smoked, there's lots of quality ways to cook turkey and make it delicious. But everyone goes for the norman rockwell style which is the worst way to cook a turkey. Even a simple spatchcock goes a long way.

I like Turkey. It’s a good bird to serve as a vehicle for salt and butter. Also makes a delicious gravy.
