I love my blackstone. I make smashies all through the summer. It's the best thing for sure. But like literally whatever you would cook in a pan. Grilled cheeses, burgers, hot dogs, etc.
One of the better things I made were tacos. I did a chipotle chicken and carnitas tacos, yhou heat the tortillas on the grill then fill it with the seared off fillings.
Also obviously full breakfast. Grilling potatoes takes the longest and eggs/pancakes take the least. If you have a 3/4 burner. shut off a burner or put it at it's lowest setting as your warm zone. SO you cook your potatoes until they're well seared and mostly if not entirely cooked on the hot zone through then move to the warm zone so they won't cook as much any more. Same with bacon or sausage cook most of the way through but not all the way, then move to the warming zone. Then do your fast cooking things like eggs, pancakes and grilled bread.
French Toast, etc.
Of course you can go the steak route, but that's slightly less great IMO especially when compared to just a regular ass charcoal grill.
