Dry brine it. Wash off the brine. Pat dry. Spatchcock. Put pats of butter underneath the skin of the breasts. Drizzle olive oil over it. Sprinkle with herbs/salt&pepper/rub of your choice. Cook.

I am by myself for the holiday.

But I am happy because my family will be with the others in the family and I have to work.
 
Here I was thinking you were gonna post a recipe to smoke a bird bedell.

this guy is interesting, he does a thing called the Food Lab. Some of his stuff is dumb some of it is cool. He speaks in a language that a lot of men get because it's very methodical and descriptive. That being said, much of what he does is pretty food basic.

I'm trying to convince my girlfriend to throw and adult holiday party just so I can finally cook a turkey. Haha
 
I did something like this a few years ago. Turned out pretty good but it's difficult to screw up a turkey. I believe my recipe called for fresh rosemary sprigs under the skin with the butter, iirc.
 
Last year I made a herbed-butter. Didn't have time this morning - but yes, you can never go wrong with rosemary. Took 1:15 to cook our 17 lb. bird today.
 
I have been sick so I slept most of Thanksgiving and still not in good shape today.
