Still Playing the Waiting Game
I know some of you swinging.....er, "fellas" have some good recipes to share! post em here!
Nick's Discada (best tacos ever...well aside from beef tongue maybe)
you need:
a big frypan (traditionally cooked outside on a special DISCO pan, I just use the largest deep skillet I have)
1/2 lb of bacon chopped into small pieces
1/2 lb or so of fresh chorizo (not the smoked or cured kind, the soft fresh kind)
1/2- 1 lb of your choice of ground or chopped meat (I use wtvr is left over, today I used 1/4 lb of ground beef and 1 large cooked porkchop finally diced)
1 large tomato cut into wedges and then halved
1 large onion sliced into half rings
the chile of your choice both in type and amount
*- you may like cilantro, I think it tastes like soap, but it's a tradition to add raw cilantro to the tacos after you make one, yer call
INSTRUCTIONS:
cook the bacon until 90% done, drain and set aside
cook the chorizo and use the back of a large spoon to break it up fine, drain and set with bacon
cook the meats of your choice until 75% done then add the onion , tomato and sliced chiles
once the veggies are soft and cooked down, add back the bacon and chorizo, let cook for 5-10 minutes
serve with tortillas and wtvr mexican style sides you like! trust me, these are so much better than regular ole ground beef tacos!
