Mathematically it is pretty improbably.
From 560 to 240 is 320 pounds of weight loss. Over 2 years is 3 Pounds a week. Which isn't impossible without surgery etc. But improbable. IIRC the max weight you can lose in a week is theorized around 5 pounds. THe standard per week is 1-2 pounds.
So either he had weight loss surgery (probable) or he's starving himself (not likely as he has muscles)

Odds are if you're making a change from not lifting to lifting your goal is sliding your macros to higher protein, odds are you cannot feed your muscles while running a 2500 a day deficit.
Unless he's lying about timeline or omitting weightloss surgery it's improbable for him to lose that much weight and lift enough to gain noticeable biceps.

At those high weights you can shed much more than 1-2 pounds. Once he reaches a threshold the weight loss will be more as you referenced but with commitment and those top weights shedding 5-10 pounds a week isn't (a) hard or (b) unhealthy.
I agree with you as it seems like everyone who gets to that level of obesity is a republican from some backwoods part of the south.

Have cut out a lot of alcohol over the last month, even while on a trip to the keys. The difference is staggering. Appetite has actually been higher, but still realizing the fat loss benefits. Can see a time when I only drink in very social situations or one drink to finish of the weekend or a nice meal ahead.
every time I gain weight its when I am drinking a lot... either rduring work travel or vacation.
